Ingredients For arugula and fennel parmesan salad

  • 2 Tbsp
    evoo
  • 2 Tbsp
    lemon juice, freshly squeezed if you can
  • 1 Tbsp
    water
  • 1 tsp
    dijon mustard
  • 1/2 tsp
    minced fresh thyme
  • 1 clove
    garlic, minced
  • 1/8 tsp
    salt
  • 1/8 tsp
    pepper
  • 6 c
    arugula
  • 1
    fennel bulb, thinly sliced
  • 1/4 c
    shaved parmesan cheese

How To Make arugula and fennel parmesan salad

    Whisk together dressing of EVOO, lemon juice, water, mustard, thyme, garlic, salt, and pepper.

    Toss together arugula and fennel. Pour on dressing and toss again to combine.

    Garnish with Parmesan cheese.
