A local restaurant, The Fed of Clarkston had a watermelon salad in 2018. It was wonderful. Preparing for a baby shower, I took their idea of watermelon and feta and created an appetizer. Adding bacon and pistachios because everyone needs those!

Ingredients For watermelon wedge

  • slice
    watermelon
  • pinch
    sea salt
  • 1/2 c
    crumbled pistachios
  • 1/2 c
    cooked crumbled bacon
  • spinach, fresh
  • Drizzle
    balsamic vinegar
  • 1/2 c
    feta cheese

How To Make watermelon wedge

  • 1
    Slice seedless watermelon creating a wedge. Sprinkle salt on top of watermelon. Build as you'd like; spinach, bacon, pistachios and feta. Drizzle balsamic. You can use cookie cutters to be crafty with shapes such as stars for the Fourth of July.
