2WASH SEVERAL TIMES,THEN PLACE IN A LARGE COOKING POT.COVER WITH WATER AND COOK UNTIL TENDER,THEN DRAIN.MIX THE SUGAR,VINEGAR AND CINNAMON STICKS,RED HOTS.BRING TO A BOIL.COOL.POUR OVER THE RIND AND LET STAND OVERNIGHT.

3BRING TO A BOIL AND BOIL UNTIL THE RIND IS TRANSPARENT.PACK THE RIND INTO HOT STERILIZED JARS,THEN FILL WITH HOT SYRUP.
