Ingredients For tomato preserves

5 lgred or yellow tomatoes about 3 lbs.

4 1/2 csugar

1cinnamon stick
-
2 tbspminced fresh ginger root or preserved or 1tsp ground ginger

2lemon or limes thinly sliced
How To Make tomato preserves

1Peel tomatoes and remove core .Place in glass or plastic bowl;add sugar and let set overnight.Drain juice into a large heavy cooking pot;add cinnamon stick and minced ginger root. Boil rapidly until it thinkens, about 20 minutes.

2Cut tomatoes into 6 to 8 wedges ;Add juice with sliced lemons,cook until mixture thinkens and clears .20 to 30 minutes.Discard cinnamon stick if desired.

3Pack into hot sterilized jars. adjust lids. Process in a hot water bath for 20 minutes.May be kept in refrigerator. MAKES 5 HALF PINTS
