Ingredients For tomato preserves

  • 5 lg
    red or yellow tomatoes about 3 lbs.
  • 4 1/2 c
    sugar
  • 1
    cinnamon stick
  • 2 tbsp
    minced fresh ginger root or preserved or 1tsp ground ginger
  • 2
    lemon or limes thinly sliced

How To Make tomato preserves

    Peel tomatoes and remove core .Place in glass or plastic bowl;add sugar and let set overnight.Drain juice into a large heavy cooking pot;add cinnamon stick and minced ginger root. Boil rapidly until it thinkens, about 20 minutes.

    Cut tomatoes into 6 to 8 wedges ;Add juice with sliced lemons,cook until mixture thinkens and clears .20 to 30 minutes.Discard cinnamon stick if desired.

    Pack into hot sterilized jars. adjust lids. Process in a hot water bath for 20 minutes.May be kept in refrigerator. MAKES 5 HALF PINTS
