There's a restaurant in Wisconsin called The Great Dane and they serve a wonderful Cuban sandwich with fried plantains on the side. This is reminiscent of that yummy side...

Ingredients For simple fried plantains

2-3ripe (black) plantains
-
1 coil (approximate - for frying)

flaked salt or turbinado sugar, for serving (optional)
How To Make simple fried plantains

1Heat oil in large skillet. Oil should be medium heat, about 325ºF.

2Peel and slice plantains in uniform slices about 1/2 inch.

3Saute slices in hot oil for about 2 minutes per side, until a golden yellow.

4Lower heat and cook for another 3-4 minutes, turning once or twice until golden brown.

5When ready, remove plantain slices from pan and place on paper towels to drain. Sprinkle lightly with flaked salt or turbinado sugar, if using.

6NOTE: to ripen plantains you can put them in a paper bag with an apple for a few days.
