2 cbaby spinach

1/3 cred onion, thinly sliced

1 1/2 Tbspfresh lemon juice

1/2 tspdijon mustard

1/2 tsphoney

1/4 tspsalt

1/4 tspfreshly ground black pepper

1 smgarlic clove, minced

2 Tbspextra-virgin olive oil

1 cdried cherries (or fresh if you have them)

1 ozcrumbled goat cheese (about 1/4 cup)

1/4 csalted pistachios
How To Make cherry, goat cheese and pistachio arugula salad

1Combine arugula, spinach and onion in a large bowl.

2Combine lemon juice, mustard, honey, salt, pepper and garlic in a medium bowl, stirring with a whisk. Gradually drizzle in olive oil, stirring constantly with a whisk. Drizzle dressing over salad and toss gently to coat.

3Arrange 1 1/2 cups salad on each of 4 plates. Top each serving with 1/4 cup cherries, 1 tbsp. cheese, 1 tbsp. pistachios.
