Ingredients For blue plum chutney

  • 3/4 c
    cider vinegar
  • 1 c
    brown sugar, firmly packed
  • 4 c
    halved and pitted blue plums
  • 3/4 c
    raisins
  • 1/3 c
    chopped onions
  • grated rind and juice of 1 lemon
  • 1/3 c
    finely chopped preserved ginger
  • 3 clove
    garlic,finely chopped
  • 1 Tbsp
    mustard seed
  • 1/2 tsp
    crushed red pepper
  • 2 tsp
    salt
  • 1 tsp
    allspice, ground

How To Make blue plum chutney

  • 1
    In a heavy stainless steel saucepan bring vinegar to a boil and stir in brown sugar.

    Add the plums,raisins,onions,rind and juice of lemon,ginger,garlic,mustard seed,red pepper,salt and allspice. Simmer about 1 hour, or until thickened.

    Pour into clean jars to within 1/2 inch of the top and cap. Process in a hot water bath for 5 minutes
