This is a great family recipe that is a great side dish for any meal. The pineapple has a sweet and savory flavor when baked, and the cheese gives it a really nice texture.

Ingredients For baked pineapple casserole

  • 2 can
    pineapple chunks (20 oz. each)
  • 1 stick
    margarine (melted)
  • 2 c
    cheddar cheese (grated)
  • 4 Tbsp
    flour
  • 1 c
    sugar
  • 1 c
    ritz cracker crumbs
  • 4 Tbsp
    pineapple juice

How To Make baked pineapple casserole

    Drain pineapple, and reserve the juice.

    Combine melted butter, sugar, flour, and juice in a large bowl.

    Add pineapple and cheese.

    Pour into a 9x11 baking dish, and bake at 350 for 20 minutes.

    Crumble 1 - 1.5 cups of Ritz crackers.

    Add Ritz crumbs as topping evenly over pineapple mixture, and bake at 300 degrees for 20 more minutes.
