This is a super quick and delicious dish to put together. I listed it as a side because we eat it with veggies and a meat, but it could be used as a desert. Either way it is very good.

Ingredients For baked apricots

  • 1
    15 ounce can apricots
  • 1
    sleeve ritz crackers, crushed
  • 1/4
    cup brown sugar
  • 1
    stick butter (i use smart balance), melted or cut in pats

How To Make baked apricots

  • 1
    Preheat oven to 350 degrees. Spray 8 inch square pyrex dish, (or one of approximate size). Pour apricots with juice in dish, sprinkle brown sugar over, top with 1/2 the butter, sprinkle crushed Ritz crackers over mixture, covering well. Top with rest of the butter. Bake until mixture is bubbly and crackers are slightly browned, approximately 20-25 minutes.
