1 teaspoon cornstarch

1/4 cup canned water chestnuts (drained), finely minced
2 tablespoons finely minced scallions
1 teaspoon finely minced fresh ginger (or more, according to taste)
3/4 pound shrimp, peeled, deveined, and tails removed
