INGREDIENTS
2 tablespoons peanut or vegetable cooking oil
8 stalks scallions, cut into 2-inch pieces
3.5 ounces shiitake mushrooms, thinly sliced
3 tablespoons garlic, minced
3 tablespoons ginger, diced
1 red bell pepper, julienned
3 tablespoons oyster sauce (or mushroom flavored “oyster” sauce)
2 tablespoons toasted sesame oil
2 tablespoons chili oil
2 tablespoons soy sauce
1/4 cup roasted peanuts, chopped
12 ounces long, thin noodles (like lo-mein), cooked
