4 tablespoons unsalted butter, divided
2 teaspoons sugar

1/4 teaspoon ground black pepper
1 teaspoon Dijon mustard
1 cup finely chopped onion
2 1/2 cups fresh cut corn kernels
3/4 cup fine curd cottage cheese
4 large eggs, lightly beaten
2 cups grated sharp or extra sharp Cheddar cheese
1 small can (4 to 5 ounces) chopped green chilies, drained (optional)
