I have made this catsup for many a year. I think I found this recipe out of an old newspaper years ago. I have made this for 45 years so I think it is Family and friend tested and approved. It has cayenne pepper so if you do not want it so spicey you may want to leave it out. Hope you enjoy this as my family sure does.

Ingredients For zelda's best tomato catsup

  • 8 lb
    tomatoes, [about 25 medium tomatoes]
  • 1 1/2 tsp
    whole cloves
  • 1 1/2 stick
    cinnamon sticks
  • 1 tsp
    celery seeds
  • 1 c
    white vinegar
  • 1 lg
    onion, chopped
  • 1/2 tsp
    cayenne pepper
  • 1 c
    sugar
  • 4 tsp
    salt

    In small saucepan, combine cloves, cinnamon sticks, celery seeds, and white vinegar. Cover; bring to boil. Remove from heat; let stand. Wash, core, and quarter tomatoes into a large kettle. Add onion and cayenne pepper. Bring to a boil; cook 15 minutes, stirring occasionally. Put tomatoes through food mill or a coarse sieve. Add sugar to tomato juice. Bring to boil; then simmer briskly 1 1/2 to 2 hours or until mixture is reduced by half. Strain spiced vinegar mixture into tomato mixture; discard spices. Add salt. Simmer about 30 minutes or till desired consistency. Stir often. Fill hot pint jars to within 1/2 inch of top; adjust lids. Process in boiling bath 5 minutes [ count time after water returns to boil] Makes two pints.
