Ingredients For tomato and basil goat cheese spread

  • 1/3 c
    sun dried tomatoes, dry packed (not in oil)
  • boiling water
  • 4 oz
    goat cheese, soft type (chevre)
  • 4 oz
    cream cheese, softened
  • 1/4 c
    chopped fresh basil (or 2 teaspoons dried)
  • 2 clove
    garlic, finely minced
  • 1/8 tsp
    ground black pepper
  • 2-3 Tbsp
    milk

How To Make tomato and basil goat cheese spread

    In a small bowl, cover tomatoes with boiling water. Let stand 10 minutes. Drain and discard liquid. Finely chop tomatoes.

    In a medium bowl, stir together tomatoes, cheeses, basil, garlic and pepper. Stir in enough milk to reach a spreading consistency.

    Cover and chill for at least 2 hours (up to 8 hours).

    Serve with assorted crackers.
