This is an excellent sauce to serve with most any type of fish, and it makes an excellent spread for a yummy fish sandwich. For the best flavor, combine all of the ingredients, and then store in the fridge for a few hours, or overnight. That will give the ingredients a chance to know each other. 1/4 cmayonnaise, plain variety

1 Tbsplemon juice, freshly squeezed

1 Tbspfresh dill, finely chopped

1 Tbspdill pickle relish

1 tspfresh parsley, finely chopped

white pepper, freshly ground, to taste

salt, kosher variety, to taste

1 pinchcayenne pepper (optional)

2Gather Your Ingredients (mise en place).

3Add all of the ingredients to a bowl.

4Chef's Tip: To keep the sauce/spread from getting too thin, squeeze out most of the juice from the pickle relish.

5Mix together, and then test for proper seasoning.

6Chef’s Tip: Obviously, the mayonnaise is the main ingredient in this sauce/spread, so pick one that you realty like. If stored in a sealed container in the fridge it should last 7 to 10 days.

7Chef’s Note: If you want this sauce vegan, then substitute the mayonnaise with an equal amount of Vegenaise.
