My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something our Moms could make, is there? =)

Ingredients For salmon log

16 ozcan of salmon

1 tsplemon juice

2 tsponion grated

1 tsphorseradish

1/4 tspsalt

1/4 tspliquid smoke flavoring

1/2 cchopped pecans

3 Tbspsnipped parsley

8 ozcream cheese
How To Make salmon log

1Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.

2Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.
