I grew up on apple butter and love it. I came across this recipe for pumpkin butter and it's just as scrumptious and so easy to make! I tweaked it a little to make it my own. I have it on toasted English Muffins and biscuits.

Ingredients For pumpkin butter

2 (15-oz) canpumpkin (not pie filling)

2 tspvanilla

3/4 capple cider or apple juice

1-1/4 cpacked brown sugar

2 tspground cinnamon

2 tsppumpkin pie spice

2 Tbspbutter
How To Make pumpkin butter

1Mix all ingredients together in a medium saucepan. Mix well.

2Bring mixture to boil, stirring frequently.

3Reduce heat to low and simmer 25-30 minutes until thickened. Let cool completely. Refrigerate.
