This is a recipe that I use for salad lunches and for finger sandwiches. It is a favorite with wheat bread or with wheat thins and Ritz crackers. Any way you spread it, it is good!

Ingredients For pimento cheese

  • 1 lb
    shredded sharp cheddar cheese
  • 1 lb
    shredded monterey jack cheese
  • 8 oz
    cream cheese, room temperature
  • 4 oz
    pimento
  • sprinkle of garlic powder and black pepper
  • mayo as needed
  • optional: i put chopped jalapenos with juice for heat in the mixture

How To Make pimento cheese

  • 1
    Mix cheddar and monterey jack cheeses.
  • 2
    Add cream cheese and pimento with juice.
  • 3
    Add garlic powder and black pepper to taste.
  • 4
    Generously add mayo to mix. Use enough mayo to make creamy. Chill well before using.

    Keeps at least 2 weeks in refrigerator.
