This was one of the many compound butters I made while in culinary school, and I love it as a quick sauce for homemade pasta, gnocchi and spaetzle.

12 ozbutter, room temperature

2 ozparmesan cheese, grated

1/2 ozparsley, finely chopped

1/2 ozgarlic, minced

1 Tbsplemon juice

1/2 tspwhite pepper
How To Make parsley compound butter (for pasta)

1In a large bowl, combine all ingredients and blend very thoroughly by hand. Form into the traditional tube shape wrapped in plastic wrap. Chill thoroughly before using.
