This was one of the many compound butters I made while in culinary school, and I love it as a quick sauce for homemade pasta, gnocchi and spaetzle.

Ingredients For parsley compound butter (for pasta)

  • 12 oz
    butter, room temperature
  • 2 oz
    parmesan cheese, grated
  • 1/2 oz
    parsley, finely chopped
  • 1/2 oz
    garlic, minced
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    white pepper

How To Make parsley compound butter (for pasta)

  • 1
    In a large bowl, combine all ingredients and blend very thoroughly by hand. Form into the traditional tube shape wrapped in plastic wrap. Chill thoroughly before using.
