I love using my roots as a way to put flavors together, this is a great Mediterranean combo of flavors and a quick twist on the the typical bruschetta. Makes a great appetizer or snack especially in the spring and summer months!

Ingredients For mediterranean bruschetta

    loaf of french bread sliced and toasted
  • 250 g
    feta cheese crumbled
  • 2 clove
    garlic skin peeled
  • 2 Tbsp
    extra virgin olive oil
  • 1
    zest of a whole lemon
  • 1 Tbsp
    fresh lemon juice
  • freshly ground pepper to taste
  • 3 Tbsp
    fresh chopped dill
  • 2 Tbsp
    fresh chopped chives
  • cherry tomatoes sliced in half for garnish

How To Make mediterranean bruschetta

  • 1
    Place the feta, oil, garlic, zest and pepper in a food processor. Process until smooth. Stir in dill and chives. Spread on toasted french bread slices and top with sliced cherry tomatoes.

    Also a great spread for sandwiches, turkey burgers or wraps and served with crackers.
