I love using my roots as a way to put flavors together, this is a great Mediterranean combo of flavors and a quick twist on the the typical bruschetta. Makes a great appetizer or snack especially in the spring and summer months!

Ingredients For mediterranean bruschetta

1loaf of french bread sliced and toasted

250 gfeta cheese crumbled

2 clovegarlic skin peeled

2 Tbspextra virgin olive oil

1zest of a whole lemon

1 Tbspfresh lemon juice

freshly ground pepper to taste

3 Tbspfresh chopped dill

2 Tbspfresh chopped chives

cherry tomatoes sliced in half for garnish
How To Make mediterranean bruschetta

1Place the feta, oil, garlic, zest and pepper in a food processor. Process until smooth. Stir in dill and chives. Spread on toasted french bread slices and top with sliced cherry tomatoes.

2Also a great spread for sandwiches, turkey burgers or wraps and served with crackers.
