My friends beg me to make this for their birthdays and Christmas. It is ridiculously easy and a little spicy. Duke's mayonnaise is the secret ingredient... it just doesn't taste the same without it!

Ingredients For mary beth's spicy pimento cheese

2 cfinely shredded sharp cheddar

1 cfinely shredded italian cheese blend, or other white cheese

1 mdjar diced pimentos, undrained

2 Tbsp(heaping) duke's mayonnaise

1- 1 1/2 Tbspyellow mustard

1 tspcrazy jane salt

1 - 1 1/2 tspemeril's essence

1/2 - 1 tspcrushed red pepper flakes

coarse ground black pepper, to taste
How To Make mary beth's spicy pimento cheese

1Mix cheeses, pimentos, mayo and mustard until well-blended. Add spices and continue to stir until distributed throughout cheese mixture. Spice measurements may be adjusted to taste...I add more essence and red pepper for an extra spicy kick. Die-hard spice addicts may enjoy using pepper jack cheese for the white cheese.
