low country pimento cheese spread
(1 rating)
A friend of mine's mother used to spread this into celery sticks for a snack whenever I came over after school. I loved it!! It is nice as a sandwich spread, too. Or on small pieces of rye as a canape!

How To Make low country pimento cheese spread
-
1Finely grate the cheddar cheese yourself. (The kind that comes already shredded in the bag has stuff added to make it non-stick. You don't want that kind!)
-
2Blend together all the ingredients with the grated cheddar. It's ok if you can still see little pieces of cheese or pepper.
-
3Refrigerate leftovers in a covered bowl.
