condiment essentials: booted up mayonnaise
A few years ago, while on a speaking tour through Maryland, I stumbled upon a small mom-and-pop restaurant. Great burgers, delicious fries; quite a unique condiment that had a spicy piquant flavor. Long story short, I made my own. It is great on burgers, and fries, but works in many other areas (fish, chicken, pork). Have fun experimenting with it in different recipes. 2 Tbspketchup, homemade, if possible

2 Tbsptomato sauce

1 Tbspsmooth brown mustard, like grey poupon

1 tspdehydrated onions, crushed to a powder

1 tsplemon juice, freshly squeezed

1/2 tspprepared horseradish, not horseradish sauce

2I usually start by making a mayonnaise emulsion; however, to save time, we will just use jarred mayo. If you can get your hands on a jar of Duke’s mayonnaise, do so… yummy stuff.

3If you do not have any buttermilk powder, no worries. I like the subtle tang it gives the sauce, but I would not consider it a deal breaker.

5If you are making this with store-bought mayonnaise, it should last you about two weeks. If you are making it with homemade mayonnaise (no preservatives), then storage time would be 7 – 8 days. So, only make as much as you think you will use in the allotted time.
