A few years ago, while on a speaking tour through Maryland, I stumbled upon a small mom-and-pop restaurant. Great burgers, delicious fries; quite a unique condiment that had a spicy piquant flavor. Long story short, I made my own. It is great on burgers, and fries, but works in many other areas (fish, chicken, pork). Have fun experimenting with it in different recipes. So, you ready… Let’s get into the kitchen.

Ingredients For condiment essentials: booted up mayonnaise

  • PLAN/PURCHASE
  • 1 c
    mayonnaise, plain variety
  • 2 Tbsp
    ketchup, homemade, if possible
  • 2 Tbsp
    tomato sauce
  • 1 Tbsp
    smooth brown mustard, like grey poupon
  • 1 tsp
    dehydrated onions, crushed to a powder
  • 1 tsp
    sweet paprika
  • 1 tsp
    worcestershire sauce
  • 1 tsp
    lemon juice, freshly squeezed
  • 1/2 tsp
    prepared horseradish, not horseradish sauce
  • 1/4 tsp
    garlic powder
  • OPTIONAL ITEMS
  • buttermilk powder

    I usually start by making a mayonnaise emulsion; however, to save time, we will just use jarred mayo. If you can get your hands on a jar of Duke’s mayonnaise, do so… yummy stuff.

    If you do not have any buttermilk powder, no worries. I like the subtle tang it gives the sauce, but I would not consider it a deal breaker.

    If you are making this with store-bought mayonnaise, it should last you about two weeks. If you are making it with homemade mayonnaise (no preservatives), then storage time would be 7 – 8 days. So, only make as much as you think you will use in the allotted time.
