Cilantro makes a wonderful pesto and is a nice change to traditional basil pesto. Use on pasta or as a spread on crackers or bread. To spice this up - add cayenne or red pepper flakes to the food processor.

Ingredients For cilantro-spinach pesto

1/2 bunchfresh spinach

1/2 bunchfresh cilantro

3 clovegarlic, minced

1/3 cparmesan cheese, grated

1/3 colive oil

1/4 cwalnuts

salt and pepper to taste -- parmesan will add some salt so consider that when adding additional salt to pesto
How To Make cilantro-spinach pesto

1Rinse spinach and cilantro and pat dry with paper towels. Remove stems from spinach and coarsely chop both.

2Combine spinach, cilantro, garlic, cheese and walnuts in a food processor; process until finely chopped.

3Add olive oil in a stream on high speed until smooth. `

4Use this pesto on pasta or as a spread on bread or crackers.
