Even slather on crusty bread and grill or broil until golden for your family - they'll love it. I use this on everything. Fish, veggies...and just got a brainstorm to put it on popcorn. Adjust the heat by adding or taking away some of the pepper.

Once you make this chipotle butter once, you'll want it on hand to spread on everything. It's a smoky and slightly spicy compound butter. Lime juice and cilantro add layers of flavor and give this a Southwest feel. This compound butter reminds us of milder cowboy butter. Add a few pats to spice up an ordinary steak or spread on hot biscuits or rolls.

Ingredients For chipotle butter

  • 1/2 c
    butter, softened
  • 1 - 2
    chipotle peppers, diced (from a can, seeds removed, if desired)
  • 2 Tbsp
    chipotle sauce from the peppers
  • 1 Tbsp
    freshly squeezed lime juice
  • 1 Tbsp
    chopped fresh cilantro
  • 1 dash
    garlic powder

How To Make chipotle butter

  • Whip softened butter.

    In a small bowl whip the butter, with an electric mixer, until smooth and fluffy.
  • Add minced peppers, chipotle sauce, lime juice, cilantro, and garlic powder.

  • Completely mix and chill.

    Transfer to a serving bowl, cover and chill. The longer it sits, the deeper the color and richer the flavor.
  • Add some on top of a steak to melt.

    Just before serving put 1 tsp of the cold butter on cooked steak or burgers and allow it to melt over the top. For bread, leave softened for easier spreading. Makes 24 1 tsp servings.
