Lime juice and cilantro add layers of flavor and give this a Southwest feel. This compound butter reminds us of milder cowboy butter. Ingredients For chipotle butter

1/2 cbutter, softened

1 - 2chipotle peppers, diced (from a can, seeds removed, if desired)

2 Tbspchipotle sauce from the peppers

1 Tbspfreshly squeezed lime juice

1 Tbspchopped fresh cilantro

1 dashgarlic powder
How To Make chipotle butter

1In a small bowl whip the butter, with an electric mixer, until smooth and fluffy.

2Add the minced peppers, chipotle sauce, lime juice, cilantro, and garlic powder. Whip until incorporated.

3Transfer to a serving bowl, cover and chill. The longer it sits, the deeper the color and richer the flavor.

4Just before serving put 1 tsp of the cold butter on cooked steak or burgers and allow it to melt over the top. For bread, leave softened for easier spreading. Makes 24 1 tsp servings.
