vanilla sugar

My mom was from Germany and did a lot of authentic German baking. One of the ingredients she'd use was Vanillezucker. It came in little packets that you could buy at the store. In the cookbooks that I've inherited from her, there are lots of recipes that call for it instead of using vanilla extract like we do in the US. Here is a way to make your own vanilla sugar. You can use a couple teaspoons of this as part of the sugar called for in your recipe and skip the vanilla extract. Add more sugar when your supply gets low - the vanilla is hearty enough to flavor several batches.
