This is a staple in Shanghai. By cooking the onions until browned give the oil a nutty flavor. It is used over noodles rice or to saute vegetable.

Ingredients For scallion oil

  • 2 c
    peanut, canola or vegetable oil
  • 5
    shallots thinly sliced
  • 4 bunch
    green onions chopped into pieces

How To Make scallion oil

  • 1
    Add oil to a large pot. Stir in the shallots and green onions. Cook over low heat for 30 to 45 minutes until the onions turn dark brown. Strain the oil through a fine mesh strainer pressing the onions to get all the oil out.
