rub essentials: summertime zesty dry pork rub

This is one of the rubs that I use when grilling, baking, or smoking pork. It has a sweet heat with smoky savor. Plus, the lemon zest adds an almost “Springtime” piquancy. Fix up a batch, store it in a glass container with a good lid. Store it out of the heat and sun, and it will last you six months… just in time for the upcoming grilling/smoking season. So, you ready… Let’s get into the kitchen.

  • 1/2 c
    coconut sugar
  • 2 Tbsp
    hungarian smoked paprika
  • 1 Tbsp
    dried lemon peel, ground
  • 1 Tbsp
    dehydrated onions, ground
  • 1 Tbsp
    ground cumin
  • 1 Tbsp
    salt, kosher variety
  • 1 Tbsp
    white pepper, freshly ground
  • 1 Tbsp
    chili powder, mild or hot, your choice
  • 1/2 Tbsp
    garlic powder
  • 1 tsp
    mustard powder
  • 1/4 tsp
    cayenne pepper

    Gather your Ingredients (mise en place).

    Chef’s Note: Place the lemon peel, and the dehydrated onions into a spice grinder, or use a mortar and pestle, to grind them into an even consistency with the rest of the ground spices.

    Place all the ingredients into an airtight glass container, and keep out of direct sunlight, and heat.
