rub essentials: summertime zesty dry pork rub
This is one of the rubs that I use when grilling, baking, or smoking pork. It has a sweet heat with smoky savor. Plus, the lemon zest adds an almost “Springtime” piquancy. Fix up a batch, store it in a glass container with a good lid. Store it out of the heat and sun, and it will last you six months… just in time for the upcoming grilling/smoking season. 3Chef’s Note: Place the lemon peel, and the dehydrated onions into a spice grinder, or use a mortar and pestle, to grind them into an even consistency with the rest of the ground spices.
