I like Cheez-It crackers. I make my own, and sometimes bring a bowl into the studio to nosh on while I am working. This recipe; however, is not for crackers, it is for making breadcrumbs, and used for kicking up the flavor of breaded chicken, pork, beef; even seafood. i am shy on photos; however, I made these last evening, and did not decide to publish until the last few steps... My Bad. So, you ready… Let’s get into the kitchen.

Ingredients For baking essentials: cheez-it breadcrumbs

  • PLAN/PURCHASE

    flour, all-purpose variety
  • 1/2 tsp
    dried turmeric
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    salt, kosher variety, fine grind
  • 1/2 tsp
    white pepper, freshly ground
  • 1/2 tsp
    cayenne pepper
  • 3 c
    sharp cheddar cheese, freshly shredded
  • 1 c
    parmesan cheese, freshly grated
  • 1/4 c
    sweet butter, unsalted, room temperature
  • 2 lg
    eggs, lightly whipped

    You will need a food processor or mini prep to make this recipe.
  • 3
    If you want to make these into crackers, then reduce all the dry spices from 1/2 to 1/4 teaspoons each.

    Gather your ingredients (mise en place).
  • 5
    Place a rack in the middle position and preheat the oven to 350f (175c).
  • 6
    Add the dry ingredients to a food processor and give it a few pulses to combine.

    Add about a quarter of the eggs, cheese, and butter, then give a few pulses.

    Repeat until all the ingredients are combined, and the dough forms into a cohesive ball.

    Add a sheet of parchment paper to a baking sheet and spread the dough evenly across the bottom of the sheet.

    Toss into the preheated oven and bake for about 10 – 12 minutes.

    If you are making these into cracker, then remove them from the oven, cut into squares, and continue with the next step.

    Lower the temperature to 325f (165c) and bake for another 10 minutes.

    Remove from the oven and allow to cool. They should be crisp and dry.

    Break up and toss into a food processor.

    Pulse until they resemble breadcrumbs.

    Throw into a Ziploc freezer bag and place in the freezer until ready to use.
