8large hard-boiled eggs

2 Tbspdijon-style mustard (or to taste)

1/4 tspsalt (or to taste)

1/2 tspblack pepper (or to taste)

1 dashhot pepper sauce

1/4 cmayonnaise

2 Tbspdrained capers

1/4 conion, finely minced

1 ccooked ham, diced
How To Make not only for easter egg salad with ham

1Cut the eggs in half lengthwise, and remove the yolks, reserving the whites.

2Mix the yolks with the mustard, salt, pepper, pepper sauce, mayonnaise, capers and onions.

3In a medium-sized bowl, chop the egg whites (a small potato masher works well here), and stir in the ham.

4Add the seasoned yolks to the ham/egg whites, stirring gently but thoroughly to combine.

5Refrigerate, covered, until ready to use.

6TIP: If your in a hurry you may simply mash everything up together. You may find the texture of the salad a bit different, but it'll definitely be just as tasty.
