My mint is growing fast this year. So I made this pesto. It's so refreshing. I like to serve it with Roasted leg of lamb. 5/6/14.

Ingredients For mint pesto

  • 1/2 lb
    fresh mint packed
  • 1 c
    parsley
  • 1 c
    baby spinach packed
  • 2/3 c
    walnuts
  • 4 clove
    garlic
  • 1 c
    olive oil
  • 1 c
    lime juice
  • 2 Tbsp
    sugar

How To Make mint pesto

  • 1
    Combine mint,parsley,spinach,walnuts,and garlic in the bowl of a food processor fited with a metal blade.

    Process to a paste.
  • 3
    Gradually add olive oil through feed tube and process until smooth.
  • 4
    Add lime juice and sugar. Process to combine.
