This is another great recipe that I got from my Granddaughter and I made them and served to my Bunco group. Easy to prepare and every one liked them.

Ingredients For basil pesto mini quiches

  • pkg
    a few pkgs of frozen phyllo shells, thawed out
  • 3 Tbsp
    cream cheese spread, softened
  • 2 Tbsp
    basil pesto
  • 1 Tbsp
    finely chopped pimiento

How To Make basil pesto mini quiches

    The Phyllo shells are in the frozen section at Walmarts and it takes several packages to use up all of the pesto mix. I got my basil pesto at Roths, but it is also at Walmarts under the name of Bertolli.

    Mix the cream cheese and pesto. Spoon about 3/4 tsp onto each of the phyllo shells. Garnish each one with pimiento. These make a great appetizer. I hope you enjoy them.
