4whole cloves

3/4 tspblack cardamom seeds

1/2 tspwhole black peppercorns

2 pinchwhole allspice

1 tspfenugreek seeds

1/2 tspwhole coriander seeds

1o smdried red chilies

1/2 tspgrated ginger

1/4 tspturmeric

1 tspsalt

2 1/2 Tbspsweet hungarian paprika

1/4 tspcinnamon

1/8 tspground cloves
How To Make berbere, ethiopian spice mix

1In a small frying pan, on a low heat, toast cumin, cloves, cardamom, peppercorns, allspice, fenugreek and coriander for about 2 minutes, stirring constantly. Remove from heat and cool for 5 minutes.

2Discard stems from chilies. In a spice grinder or with a mortar and pestle, finely grind together the toasted spices and chilies.

3Mix in remaining ingredients.

4Store in refrigerator in a well sealed jar.
