Often just called 'pickle' by my family, we always had this in the fridge when I was growing up. It's a great alternative to the standard green sweet relish, and just as versatile! Hope you like it!

Ingredients For uncle jack's cucumber relish

8 ccucumbers, diced

3 conions, diced

1/2 cgreen pepper, diced

1/3 csalt

3 csugar

4 cwhite vinegar

1 Tbspmustard seed

1 Tbspcelery seed

1/4 tspground cloves
-
1 tsptumeric
-
1/2 tspground black pepper
-
2 Tbspmixed pickling spice in cheesecloth

1/3 cpickling salt
How To Make uncle jack's cucumber relish

1Place diced cucumbers, onions and peppers in a large pot. Sprinkle with the Pickling salt and cover with cold water.

2Let stand overnight, then drain and rinse

3Add all other ingredients, bring to a boil, and simmer for 20 minutes

4Fill sterilized pint jars and seal.
