I found this recipe online and thought it sounded like an excellent accompaniment for simply grilled chicken or pork. I brine the meats in a salt, sugar, basil brine for about 1/2 to 1 hour before grilling to enhance their flavor and make them moist and tender. Nice, easy and light Summer dinner with grilled romaine salad with garden ripe tomato slices and light vinaigrette.

Ingredients For pam's fresh, sweet cherry relish

1 cpitted and chopped fresh sweet cherries, bing, rainier, etc.

1/2 cjicama, finely chopped

1 mdgreen onion/scallion, finely sliced, both white and green parts

1 tspmint, freshly finely chopped

1/2 to 1 tspwine vinegar or seasoned rice vinegar

1 pinchcayenne pepper or to taste

1 pinchkosher salt and freshly ground black pepper

1Mix all of the ingredients in a medium bowl, and refrigerate until needed to let flavors meld.

2Serve cool or at room temp over or along side of grilled chicken, or fried or grilled pork tenders.
