Ingredients For avocado salsa

  • 16 oz
    frozen corn, thawed
  • 2 can
    black olives, sliced, drained
  • 1 md
    red bell pepper, chopped
  • 1 sm
    onion, chopped
  • 5 clove
    garlic, minced
  • 1/3 c
    olive oil
  • 1/4 c
    lemon juice
  • 3 Tbsp
    vinegar
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 4 md
    avocados, chopped

How To Make avocado salsa

    In a large bowl, combine corn, red pepper and onion.

    In a small bowl, combine garlic, oil, lemon juice, salt and pepper; mix well. Pour over corn mixture; toss to coat. Refrigerate overnight.

    Just before serving: stir in chopped avocado into salsa.
