Ernest Hemingway loved this relish and included the makings in the 'Hemingway Burger' recipe found in his files in Cuba by the JFK Library. While difficult to find in stores it can be purchased on Amazon. I find the store-bought version too soft and 'cooked'. My version is crisp and more of a condiment!

Ingredients For wally's india relish

  • 2
    green tomatoes, cored and finely diced
  • 2
    cucumbers, finely diced
  • 1/2
    red bell pepper, finely diced
  • 1/2
    yellow bell pepper, finely diced
  • 1
    garlic clove, smashed
  • 1 Tbsp
    fresh, schredded ginger
  • 1 1/2 Tbsp
    flour or arrowroot
  • 1/2 c
    red cider vinegar
  • 1/2 c
    white vinegar
  • 1 pinch
    sugar
  • 1/2 tsp
    turmeric, cinnamon, allspice
  • 1/2 c
    chicago style pickle relish
  • 1/2
    lemon, juice of...

How To Make wally's india relish

  • 1
    Sweat the ginger and Garlic in the 1 tbl of oil. Add the flour and mix until thick. Add the vinegars and sugar and whisk. Do not burn or turn dark brown
  • 2
    When thick and sugar dissolved add 2/3 of veggies and spices. Reduce the liquid and add pickle relish, lemon juice and the rest of the veggies.

    Reduce to a jellied consistency and salt and pepper to taste. Refrigerate until 10 minutes before serving. Serve at room temp.
