Apples may be omitted, and the tomatoes and onions used only. Ripe tomatoes can also be used instead of the green tomatoes. I don't recall where I got this recipe, but how it is written is how it is written.

Ingredients For onion catsup

  • onions, sliced
  • green tomatoes, sliced
  • apples, sliced
  • salt
  • vinegar
  • spices

How To Make onion catsup

    Use equal quantities of onions, green tomatoes and apples. For the salt use 1 TBS to 3 lbs of the mixture.

    Arrange slices of onions, green tomatoes and apples in alternate layers in a earthen ware vessel, sprinkling salt liberally between layers. Allow to stand overnight, then drain. Pass them through a fine cutter of the food chopper. Put into a preserving kettle and add enough vinegar to cover, add spices and let simmer slowly until ingredients are cooked, and the consistency of catsup.
