ed's buffalo wings and sauce!
This is a version of wing sauce I've used in several of the restaurants and catering venues,casinos I've worked at over the years and it always got rave reviews,hope you get to use this in time for the big game and enjoy it too!! :)

Ingredients For ed's buffalo wings and sauce!

1/2 chot sauce/frank's

3 Tbspbutter, unsalted

1 Tbspbrown sugar, light

2 Tbspapple cider vinegar

1 Tbspsriracha sauce or tabasco sauce

1 Tbsproux
-
1/2 cwater
-
1 cflour, seasoned
-
15-20 mdchicken wings/tips removed and cut in half
How To Make ed's buffalo wings and sauce!

1In a non-stick pan melt the butter then add the hot sauce,Tabasco or Sriracha sauce,cider vinegar and bring to a simmer. Whisk in the roux then slowly whisk in the water until all is dissolved and well incorporated,smooth.

2I brine mine overnight in salted water,parboil them for 10 minutes,drain and pat dry with paper towels then dust them with seasoned flour, bake them in a 450 oven for 25-30 minutes or until crisp. If you want you can flip them over 5-10 minutes before the finish to get a crust on the other side,I didn't bother.

3Put the wings in a large mixing bowl,toss with the sauce to coat evenly,serve with blue cheese dressing,carrot and celery sticks. Enjoy!! :)
