I found this recipe a while ago. Originally, it used jalapenos or red chili peppers. I tried it again with chipotle peppers. That's the ticket.
You can try many variations on this sauce:
- Use honey or molasses in place of the brown sugar
- Try different type of vinegar
- Use more or less chipotles for a different heat level
- Try replacing half the onion with diced sweet red peppers
You can store the excess sauce for several weeks in the refrigerator or freeze for later use.

Ingredients For sweet heat barbecue sauce

2onions, large white

6 clovegarlic, minced

6chipotle peppers with adobo sauce

1 ctomato ketchup

1/2 cbrewed coffee. strong

1/4 cworcestershire sauce

2 Tbsplemon juice
-
1/4 capple cider vinegar
-
1/3 cbrown sugar, packed

2 tspkosher salt
-
1 Tbspdijon mustard
-
1/4 tspcayenne pepper (or to taste - careful! heat can overwhelm)
How To Make sweet heat barbecue sauce

1Heat 2 tablespoons of oil in a saucepan over medium-high heat

2Saute the onion and garlic until translucent, about 3-6 minutes

3Place all remaining ingredients into a saucepan and simmer gently for 20-30 minutes

4Place in a blender or using an immersion blender (boat motor) and blend the sauce until smooth
-
5Continue simmering until it is the consistency you desire, about another 5-15.
