adobo sauce

This is a good marinade sauce. It is one of more recent discoveries. It has some "bite" to it but if you use this recipe, may adjust. Of course this recipe can be used for a variety of meats .. beef, chicken,PORK(that was the original use), steak, venison... Historically it has several versions mainly : Spanish (South American, Mexican, Spain,Portuguese), & Asian (Filipi, Malaysian,). There is an island adobo too. Mine is the Asian version

Ingredients For adobo sauce

1 csoy sauce, dark

2 clovegarlic
-
2 tspsugar
-
2 tspred chili pepper (or powder-use less

1 tspcayenne pepper flakes

1 tspred pepper or red pepper flakes

1/2 stalkscallion
-
1/2- 1 smtomato
How To Make adobo sauce

1Mix all ingredients. Put in bowl and set to side.

2Cut up meat and tomato (peel it)

3Place in bowl 15 - 30 mins. Up to 60 mins I've done

4Take out meat and RESERVE the sauce.…you'll need it

5Fry your meat (stir fry is good).

6Add reserved sauce and bring to boil.

7Simmer for another 10/15 mins or til done.
