michael symon's bacon and onion jam

This is not my recipe, I saw Michael Symon cook this on The Chew. He made a grilled cheese with it but I put it on a sandwich made with grilled pork loin and barbeque sauce then grilled it like a grilled cheese. Very good. I was ask to post this recipe is the reason I am posting a Michael Symon recipe.

Ingredients For michael symon's bacon and onion jam

1/2 lbbacon, chopped

2yellow onions, sliced thin
-
3 clovegarlic, minced, i used garlic in jar

2 sprigthyme, leave, i used dried thyme

1/4 capple cider vinegar
-
2 Tbspbrown sugar
-
1 Tbspmustard seed, i used dried mustard powder
-
1/4 cbeer or water
-
1 Tbspolive oil
-
salt and pepper to taste
How To Make michael symon's bacon and onion jam

1Over medium heat cook bacon until crisp. Remove from skillet. Add onions to skillet in bacon fat and cook over low heat 12-15 minutes or until caramelized stirring occasionally. When done pour off excess fat. Add remaining ingredients to onions, except bacon. Simmer until liquid is reduced by 2/3rds and looks like jam. Remove from heat and stir in bacon.
