Ingredients For ~ refreshing chick pea salad ~

  • 1 - 15 oz
    can, rinsed garbanzo beans
  • 1 md
    to large tomato, chopped
  • 3 - 4
    green onions, sliced - plus ends
  • 1 - 1 1/2 oz
    cubed, cheddar cheese
  • 1 Tbsp
    chopped italian parsley or dried
  • finely
    chopped red pepper would be a great addition too, i was fresh out
  • DRESSING
  • 1/4 c
    balsamic vinegar
  • 2 Tbsp
    olive oil or your favorite
  • 1/2 tsp
    each - salt, sugar, pepper, chili powder
  • 3/4 tsp
    cumin

How To Make ~ refreshing chick pea salad ~

  • 1
    Toss the first 5 ingredients in a medium sized bowl. Whisk the dressing ingredients until well blended. Pour over bean mixture and toss to coat well. Chill well and toss again before serving.
