1 - 15 ozcan, rinsed garbanzo beans

1 mdto large tomato, chopped

3 - 4green onions, sliced - plus ends

1 - 1 1/2 ozcubed, cheddar cheese

1 Tbspchopped italian parsley or dried

finelychopped red pepper would be a great addition too, i was fresh out
- DRESSING

1/4 cbalsamic vinegar

2 Tbspolive oil or your favorite

1/2 tspeach - salt, sugar, pepper, chili powder

3/4 tspcumin
How To Make ~ refreshing chick pea salad ~

1Toss the first 5 ingredients in a medium sized bowl. Whisk the dressing ingredients until well blended. Pour over bean mixture and toss to coat well. Chill well and toss again before serving.
