I love, love, love Mexican-style salads! This is for one reason only... the cilantro dressing! I love it so much that I had to figure it out myself! Now, after trial and error, I have the perfectly refreshing salad dressing. Best when served over a bed of romaine lettuce with grilled chicken or shrimp, tomato, crumbled cotija cheese, and tons of slices of fresh avocado! Mmmm!!

Ingredients For fresh cilantro dressing

  • 1 c
    mayonnaise
  • 2/3 c
    milk
  • 1 Tbsp
    fresh lime juice (may add more to taste)
  • 1/2 c
    cotija cheese (or other hard cheese i.e. parmesan)
  • 2 Tbsp
    white wine vinegar (may add more to taste)
  • 1 Tbsp
    sugar
  • 2 clove
    garlic (large and peeled)
  • 1/2 sm
    onion
  • 1 tsp
    salt
  • 1/4 tsp
    ground cumin
  • 1/2 tsp
    ground cayenne
  • 1/4 tsp
    pepper
  • 1 bunch
    fresh cilantro
  • 1/2 c
    pine nuts

How To Make fresh cilantro dressing

    In a food processor or blender, combine all the ingredients listed and pulsate until smooth.

    Serve over salad, use as a dip, or add to your fish tacos. So yummy!
