Years ago, I found this on the back of a Pepperidge Farm Crouton box. They called for anchovies that you ground into a paste; I opted for store bought anchovy paste.

Ingredients For caesar salad

1romaine lettuce head, washed and torn

1/2 tubeanchovy paste

1/2 tspfreshly ground pepper
-
1 Tbspfreshly squeezed lemon juice
-
1/4 cegg substitute
-
1/3 colive oil
-
2 clovegarlic, crushed
-
parmesan cheese, freshly grated

croutons
How To Make caesar salad

1Wash and spin romaine ahead of time and crisp in the refrigerator.

2Mix garlic, pepper, lemon juice, egg substitute, anchovy paste and olive oil.

3Pour dressing over Romaine, sprinkle Parmesan and croutons and toss well.
