Ingredients For avocado-tomato & cucumber salad

  • 2 lg
    avocados,ripe,peeled and cubed
  • 3 lg
    tomato wedges
  • 1 lg
    cucumber ,seedless,cubed
  • 1 bunch
    cilantro, fresh,chopped
  • 2 stalk
    scallions,sliced
  • 2 lg
    limes,juiced and zest
  • 1 pinch
    each of salt,pepper,cumin,garlic powder
  • 1 c
    olive oil, extra virgin

How To Make avocado-tomato & cucumber salad

    Assemble the salad in your salad bowl,toss everything together except the dressing. We want to do that just before serving,the salad looks and tastes fresher that way.

    For the dressing: Place a stainless steel bowl and wire whisk in the freezer for 30 minutes prior to mixing,this helps in emulsifying the dressing. Add the lime juice and zest,spices. Then slowly drizzle in the olive oil while vigorously whisking the dressing.

    This can be served as a side dish to many entree's or as a topping over grilled chicken breast,steak or fish. Whichever entree you choose to make this is a welcome addition,enjoy!! :)
