    potatoes, peeled
  • 4
    garlic cloves
  • 2 Tbsp
    olive oil
  • 1 Tbsp
    white vinegar
  • salt/pepper to taste

How To Make skordalia (potato garlic dip)

    This is best if done in a mortar....Peel potatoes , cut into pieces & boil till fork tender.

    meanwhile in a mortar, place the garlic salt & pepper and mash till forming a paste.

    add potatoes a few pieces at a time and keep mashing till well combined, then add in the olive oil and vinegar and also combine well...serve room temperature as a dip...perfect for dipping fried calamari.
