Ingredients For ~ refried bean dip ~

  • 1 lb
    chorizo (mexican sausage, mild or medium ( casings removed )
  • 2
    jalapenos, chopped
  • 1 sm
    onion, chopped
  • 1 can
    refried beans
  • 1/2 tsp
    cumin
  • 1/4 tsp
    chili powder
  • 1 sm
    can - green chiles - optional
  • 1 1/2 c
    shredded, cheddar cheese - divided
  • green
    onions, sliced for top - optional

How To Make ~ refried bean dip ~

    In my iron skillet I crumbled the sausage and fried until cooked through. Remove to a bowl and set aside.

    If not enough fat in skillet add a Tbsp of oil and saute the onions and jalapeno's.

    Once tender crisp, add the meat back to pan and the refried beans, seasonings, green chiles if using, combine well and heat through. If too thick, can add a little water.

    Add 1/2 cup cheddar cheese, seasoning and stir until cheese is melted.

    Spread into a 1 quart oven proof baking dish.

    Top with remaining cheddar cheese and place in oven under broiler until cheese is melted and bubbling. Sprinkle with green onion if desired.

    Serve with favorite tortilla chips or corn chips.
