Ingredients For chile sauce, red (sallye)

1 lbdried red chiles

2 clovegarlic, chopped fine

2 lgonion, chopped fine

2 Tbsplard or cooking oil

2 Tbspflour

1 cantomato sauce

1 Tbspsalt

1 Tbspground oregano

2 cwater
How To Make chile sauce, red (sallye)

1Remove stems and seeds from chiles. Place in heavy saucepan and cover with water. Boil for 30 minutes at medium low temperature Remove from heat Puree in food processor or blender until smooth and set aside

2Add lard to heavy skillet and saute onions and garlic until translucent. Add flour and stir to make a smooth paste Add red chili pulp to flour mixture and stir to blend

3Add salt, oregano and toomato sauce Simmer for 1/2 hour on low heat.

4Store in airtight jar in refrigerator.
