I needed to use up a couple of very ripe peaches today and this is what I came up with. I served it with seared chicken breasts.

Fruit salsa is wonderful on chicken, fish, or all alone on a tortilla chip. This is a wonderful way to use ripe and juicy peaches. It's sweet with a slight bite from the green onions. Fresh bell peppers and a lot of cilantro make this salsa wonderful. A bit of tang from lemon juice balances out the sweetness of the peaches. Simply delicious!

Ingredients For peach salsa

  • 2 md
    fresh ripe peaches
  • 1/2 md
    fresh green pepper
  • 1/4 c
    chopped spring onions with green tops
  • 1/4 c
    fresh cilantro, chopped
  • 1 tsp
    honey
  • 1/2
    lemon, juiced & zest
  • salt & pepper, to taste

We used 3 peaches because ours were on the small side.
  • Peaches in an ice water bath.

    Remove skin from peaches by peeling or placing peaches in boiling water for 2 minutes and then plunging into ice water.
  • Diced peaches, green pepper, chopped onions, and cilantro in a bowl.

    Dice peaches and place them in a bowl. Dice green pepper and chop onions and cilantro. Add to peaches.
  • Adding honey to the bowl.

    Add honey, lemon juice, zest, salt, and pepper.
  • A bowl of Peach Salsa.

    Stir well. Let sit at room temperature for 1/2 hour for flavors to marry.
